Dandelion greens, that it is. I can't resist knowing there is a free salad plant in our yard, so I made this fritatta for dinner last night (using some from a part of the yard where our dog does not go...). It was easier even than I had hoped. Basically i just browned and then mashed up some tater tots in a skillet (they were the only potatoes we had), added some cooked sausage, sprinkled the greens over that, grated cheese over that (a scrap of goat's milk gouda i got at Lucky's cheese bargain bin), and then poured about seven eggs over the top, added some crushed fennel seed and pepper, and popped it in the oven. And it was delicious.
If you don't use a cast iron skillet, just wrap your regular skillet's handle in foil like I did. Works perfectly. Also, i usually turn my oven broiler on low for the last couple minutes, just to crisp things up a little.
