On baking bread

I was inspired to make bread today after reading a synopsis of this Michael Pollan audio interview (there isn't really any convenient time these days to listen to things unless it's music in the background): http://climatedesk.org/2014/01/michael-pollan-explains-whats-wrong-with-the-paleo-diet/

I've always been skeptical of the paleo diet's idea that modern things like grain are all bad for you, but i also know that as a diet, going paleo works well for lots of people. So this isn't meant as a criticism at all. I just like finding someone else who backs up my ideas. ;) The thought of dough going all yeasty-fermenty totally inspired me to make some whole wheat sandwich bread dough. Step one is now complete - mixing.  The dough was rather a sticky, horrible mess, reminding me why I hate baking bread. But we'll see after it sits in the fridge for 24 hours. Yeast, do your thing.
