I'm using "spring vegetables" loosely here, as they are also typical of winter, but small carrots at a bargain price must be springy, right? Ditto fingerling potatoes (though sadly not a bargain). Since i had chicken thighs (apparently it's chicken season, too, because they're $0.88/lb), i roasted them all together. With some chopped green onion "greens" from our garden and some orzo with almonds and itty bitty lettuce from our garden, it turned out pretty deliciously. And it really does feel like spring to be harvesting things from the greenhouse, even if only a handful of lettuce that needed thinning.
I've been finding it very challenging to cook lately, but having good produce on hand is a great motivator.
And we discovered that Kaylen loves carrots! She ended up eating all hers and most of mine. That's the only drawback of a good eater -- she'll eat you out of house and home if she can.
