Lemon balm iced tea

It was almost 100 degrees yesterday and it's supposed to be the same today. Our 1950s house was not designed for good air circulation, so unfortunately keeping the windows open at night doesn't cool it down that much once the inside temp gets over 80. I'm extremely thankful for a cool basement and a window A/C unit in our bedroom! But the rest of the house is really too hot to use. Except for quick trips to the kitchen for things like iced tea and blueberry popsicles....

You could also use mint for this recipe, but I have about a million lemon balm leaves in the backyard.

For lemon balm iced tea:
8-10 sprigs of lemon balm, washed well
1 tea bag (I used Tazo Zen green tea)
1-2 teaspoons honey or sugar
1.5-2 quarts boiling water (or if you have an electric kettle, two mostly-full kettlefuls)

Pour the boiling water over the lemon balm leaves and then mash them a bit with a wooden spoon. Add the sugar and tea bag. Let the tea bag steep for 2-3 minutes and then remove. The leaves should steep for a total of 10 minutes and then remove those as well. Chill and then enjoy! (You can also add other herbs - I put a little fresh rosemary in the batch I made yesterday.)
