Ode to my pressure cooker

Ok, not a real, poetic ode, because that would require things like time and thought, but still...i really like my pressure cooker. 

It's only a small, three-quart one, but it's the right size for most things and I actually have room to store it. So it's all right if i never pressure-cook a whole chicken. (Besides, i could write another ode to cooking whole chickens in the crock pot.)

I don't even cook that many meals in it. But I cook beans all the time, in batches big enough to freeze part of. And "homemade" beans are much more tender and flavorful than canned. (And not much more effort than opening a can, either.)

I admit to some trepidation when I first used the thing - imagining it blowing up in my face - but hey, that just adds to the thrill. Extreme Cooking 101! (But really, pressure cookers are probably safer than using a grill. I have never started a fire in my pressure cooker!)

Tonight, though, we finally had a real pressure cooker dinner of the most deluxe kind: boeuf bourguignon! Something i have always wanted to make and still can't spell without looking it up....

Thirty-five minutes to beef so tender it falls apart on your fork.

  1. My mother-in-law gave me a pressure cooker when we got married; she thought it a staple in the kitchen. I haven't used it much in recent years, but you are inspiring me to use it again. I've done the beef b, but in the Crockpot. Yum!
