Microwave rhubarb apple crisp

 I couldn't resist buying four pounds of rhubarb, so we've been having rhubarb apple crisp almost every night. Kaylen and i even had it topped with yogurt for a snack the other day. And we had some in our smoothies today. (Or some version of it.) The lovely thing about microwaves is you can whip up a dessert like this in minutes. I think it's the very best use of them.

Typically for me and Jason, i do something like this: dice one stem of rhubarb (tip: use scissors! It cuts easily and you don't get strings peeling off), chop half an apple, sprinkle with sugar and juice from half a citrusy fruit (optional), and microwave for one minute in individual bowls or ramekins while you prepare the topping. For the topping, mix about half a cup of oats (i use quick oats now), a tablespoon or so of fat - either olive oil or coconut oil or cold butter - and some spice (usually cinnamon). You can also add more sugar for this step if you like. I usually mix it with my fingers on a paper plate to make this really simple... Then sprinkle it over the top of the ramekins and microwave for about 80-90 more seconds, until the fruit is tender and the oatmeal softish. Eat it plain or top it with ice cream to make it even tastier!
