I posted about this before, but here's a better picture. We're still going strong on the microwave desserts - last night I had this with mangoes instead of berries and I think it's my favorite.
To make this, just line the bottom of two small dishes with berries and then make the "crumble" to put on top. Mix together about a tablespoon of sugar, an equal amount of olive oil, half that amount of whole wheat flour, and about 1/3 cup of oatmeal, using your fingers to blend it. (you can also add cinnamon or ginger.) Pour over the berries and then pop in the microwave for 90 seconds. You could probably use any sweetener instead of sugar if you want it to be healthier.
Of course, I like ice cream on mine.
