Sweet Salsa Recipe

Thanks to my mother-in-law (henceforth to be referenced as OM ;) ) for sharing this recipe for the blog. It sounds good! But how can you go wrong with avocados? Although Jason might disagree....


Sweet Salsa

1 can white corn, drained  (can also use frozen white corn)
1 can black eyed peas, rinsed and drained
1 lg jar pimentos
1/2 yellow pepper, chopped
1 avocado, chopped
1 bunch green onions, chopped

MARINADE:

1/2 C olive oil
1/2 C sugar
1/3 C white vinegar
1/2 bottle Tiger sauce (near the tabasco)

Mix marinade and the first 4 ingredients and let it sit overnight in the frig.  Drain off most of the marinade and add avacoado and green onions.  Salt & pepper to taste. Serve with chips!  YUM!!
