A lot of recipes seem to label themselves easy but then take me like 45 minutes or more, and that does not qualify, in my opinion. This is when fish turns out to be a really nice thing to cook, since it's done in minutes in the single digits. I pinned a recipe a few weeks ago for cod in spicy coconut broth and finally made it today, after re-reading the recipe once or twice in awe of how simple it was. Then i complicated it a tad, but only because i cannot leave recipes alone.
I made a couple substitutions: tilapia for cod (because it's cheap) and cabbage for bok choy (because it's cheap), and i also used a 5oz can of coconut milk and just added 5oz of water. I also only used about two teaspoons of turmeric, because i wasn't sure how spicy it would be. (Spicy enough.) If you use cabbage, add it in with the onion and saute it instead of adding it to the broth later.
I served it over rice and added cilantro and it was delicious. Kaylen and Jason might not actually have loved it, but Penny thought tilapia was great, so i'm going to call it a success!
