I just got about two pounds of golden beets for $2, but fortunately Penelope loves them even more than I hoped she would. I finally got the cooking time (i.e. zap in the microwave) right for her to really be able to go to town on pieces of beet; when I roast vegetables for her they usually get too mushy or stringy and they just fall apart on her after a few minutes and then i have to actually make some effort to help her. Still, even with helping, baby-led weaning is a dream come true for tired mamas. Also. She eats beets.
Anyway, i've discovered that even though I don't like the red kind, golden beets are great. Especially when chopped into itty bitty matchsticks or finely grated so the taste is not too strong. ;)
And kind of related, now I have David Bowie's "Golden Years" stuck in my head. It's not a bad thing, though, to randomly burst out singing "Nothin's gonna touch us in these golden yeeears..."
