Last night i bought a pound a raw peanuts to make my own peanut butter, since i figured that was cheaper than buying it. It actually didn't make as much as i expected, but if you find a great deal on peanuts then this would be really cheap. After trying it, though, i don't care so much about cost. It just tastes good! No unnecessary sugars or fat, but a rich taste. Also, it's actually so simple to make that i can easily whip it up with a toddler around. There are very few homemade things that fit that qualification!
I roasted the peanuts because every recipe i found said to, but next time i'm only going to roast them for half the time. Just a preference for flavor. I melted about a tablespoon of coconut oil on a cookie sheet, added the nuts and a light sprinkle of coarse salt, and cooked them at 350 for 15 minutes, then gave them a stir and turned off the oven but left them in for 10 more minutes. After that you just pop them in a food processor, turn it on, and let it go for several minutes till the nuts are finely chopped. At that point you'll probably need to scrape down the sides, then run it again till it turns to butter. It actually took less time than i expected, perhaps because Kaylen was distracting me.
Now i kind if want to go eat some more....
