My mother-in-law made a delicious apple cake yesterday and it got me in a cake-baking mood. Since it's a holiday and Jason's home (and K is taking a long nap!), baking is actually doable today.
I had a "stick" of rhubarb left, so I chopped up that and a granny smith apple and sautéed them in a little butter and brown sugar in a 9" cake pan, then poured batter over the top and baked it. (i used a pineapple upside-down cake recipe.)
Can't wait to try it!
