I've posted before about homemade chai, but this recipe is even simpler. Add about two cups of water to a small saucepan and throw in just a few spices - today it was 1/3 of a vanilla bean, 1/4 tsp anise seeds, and a 1" chunk of fresh ginger sliced into several pieces. Let it simmer for 10-15 minutes, then add a couple tea bags and steep for 2-3 minutes. Heat some milk in a tea cup, add a little honey or sugar, and pour some of the chai concentrate through a strainer to fill the cup. I like this method because it provides good flavor without being overpowering - and without the tea getting oversteeped, which I think creates a more bitter flavor.
