What I've been eating all day
I found this recipe when searching for a recipe to use the apples that were getting wrinkly in the fridge:
pumpkin apple muffins recipe. Of course, I couldn't manage to *quite* follow the recipe, but I'm sure it's great if you do! I only made about 5/8 of a batch, so reduced the ingredients by 1/4-1/3, depending on which was easiest. I used some malt syrup plus extra brown sugar in place of the white sugar and I also added finely-chopped candied ginger that I got from the after-Christmas sale at Albertsons. Good stuff!
